Marinated Tomatoes
These are always a crowd favorite. you'll love them.
8 ounces cherry tomatoes, cut in half
1/4 cup extra virgin olive oil
4 cloves garlic, minced
2 tablespoons balsamic vinegar
1 teaspoon sugar
1/4 teaspoon salt
pinch cayenne pepper
1 tablespoon fresh thyme, finely chopped
1 tablespoon fresh parsley, finely chopped
Cut your tomatoes and place in a serving bowl.
In a food processor or blender add garlic cloves, balsamic vinegar, sugar, salt, and pepper. As you blend these ingredients, slowly add in the olive oil. Once you have emulsified these ingredients, add in the parsley and thyme. Give the mixture one quick pulse, but not too long as you want to see the fresh herbs.
Pour the mixture over the top of the tomatoes. You may serve immediately, but the longer you allow them to marinate the better they become.
Serve chilled or at room temperature. Serve with a great crusty bread to soak up the excess marinade.
