i absolutely love zucchini. any which way. i love it. sautéed. roasted. spiralized. love it all.
that being said. this flatbread is prob my very fave way to enjoy it. there is nothing fancy about this. its just simple. and delicious. and whips up in about 10 minutes.
i always use the Sami’s Bakery slim trim lavash. they are a company here in tampa. so i grab mine at our local food store. however. you can order them online to have them shipped if you are not local. shipping prices can be a bit high. so order in bulk. then store these in the freezer.
i simply then use half a block of Boursin cheese. spread it evenly over the lavash shell. slice your squash & zucchini thinly. then layer them onto the cheese filled lavash.
drizzle a tablespoon of olive oil over the veggies. and then season generously with salt. pepper. & dried oregano.
bake at 400 degrees for about 8-10 minutes. i like mine well done. extra crispy & browned. its soooo delicious.
