i have never. ever. met a cookie that i did not like. my bestie & i jokingly call ourselves the cookie monsters. when in reality it is not at all a joke. it is a fact. between the two of us. we could tell you our fave cookies & why. we could break down the anatomy of said cookies. and then we could out eat any man with same said cookies. not sure if we should be proud of that or not? but i kind of am.
one time. i ate 18 oreos in one sitting. can’t believe i just admitted that. its out there now. no take backs. oh well. it just solidifies the fact that i am an actual cookie monster.
that being said. you can bet your pretty little tooshie that i am going to have a boat load of cookie recipes for you . . . chewy ones. crispy ones. chocolate ones. raisin ones. big ones. little ones. alllll the ones.
one of my all time faves is a cranberry. white chocolate chip. walnut. oatmeal. cookie. it has a great flavor combo. the cranberries bring a tartness. the chocolate brings in such extra sweetness. and the walnuts get slightly toasted while baking. bringing a deep nutty flavor. its just so dang good. and that oatmeal. that just allows me to believe that this doubles as both a cookie AND an appropriate breakfast option.

the base is a typical cookie dough. sugar. butter. vanilla. egg. then you get to add in all those goodies. explosions of flavor. i also add a dash of pink himalayan salt. it adds a great punch.
kristen hack : I always add extra vanilla extract to e v e r y t h i n g. trust me. and do it. anything i am baking that calls for vanilla. i typically double the measurement. and that’s a really good choice.

once your dough is made. use an ice cream scooper to make perfect little cookie balls. having the same size balls will ensure even baking. plus it just looks prettier when they are all the same size & shape.
i can promise you that when these babies pop out of the oven you will be drooling over them. they are pretty. they smell divine. and they are really delicious. so go ahead. mama. eat the dang cookies. and i double dare you to eat them for breakfast. too.
i had to practice a bit of self control & not eat all of them. because i am bringing these little parchment paper wrapped cookie stacks to some of my favorite people. friends that greet me every day with a smile. my starbucks barista & my mcdonalds drive thru gals. gotta show the love because they keep mama happy.
kristen’s white chocolate cranberry cookies:
2/3 cup unsalted butter
2/3 cup brown sugar
2 large eggs
1 teaspoon vanilla
1 1/2 cup flour
1 teaspoon baking soda
1 teaspoon fine pink himalayan salt
1 1/2 cup craisins
1 1/2 cup oats
1 1/2 cup white chocolate chips
1 cup pecans. chopped.
beat together softened butter & sugar.
add in room temperature eggs & vanilla.
in a separate bowl. sift together flour. baking soda. & salt.
slowly add dry mixture into wet mixture.
once fully incorporated add in the raisins. oats. chips. and pecans.
bake at 375. for 10-12 minute.
