one of my very favorite ways to eat steak is with a great salad. forget the steak & potatoes . . . gimme a salad bursting with flavor & texture. add a filet and i am a happy camper.
i especially love this on a low carb day. because i can load up that salad with all the high fat goodness. all the cheese. all the nuts. all the oils. just so delicious.

before we build our salad. lets talk about the very best way to prep a filet. i do not own a grill. i have actually never even used a grill. and i am totally ok with it. because i am convinced this method of steak prep is better than any grill prepped steak.
make sure your filet is at room temp. set it out on the counter for at least an hour. this will ensure even cooking all the way through without burning the edges. then season those babies up with alllll the things. salt. pepper. garlic salt. montreal seasoning. you practically cannot over season. flavor it up.
heat up a generous portion of olive oil in your frying pan. once the oil is piping hot. set your filet down for two minutes. do not touch it or flip it. let that side sear. after two minutes turn it on the outer smaller sides. about a minute per edge. you are just wanting to brown all edges. finally flip it to the opposite side and place the entire pan into an oven at 385 degrees. depending on how well done you like your steak. keep it in the oven for about 4-8 minutes.
after you remove the pan. let it sit for a few minutes before slicing.
i can promise you that this will be the best filet ever. it is so tender & so flavorful. and downright so easy to make. kiss that grill goodbye.

so lets talk about that salad now. its really very simple. minimal ingredients. but maximum flavor. i like to use a mix of arugula & spinach. the arugula brings a great peppery taste. while the spinach brings in a boatload of nutrients. then i add in some sweet & spicy pecans. recipe for those are coming soon. a generous portion of feta crumbles. filet. and you have yourself a salad that is literally bursting with flavor & texture.
this salad is substantial enough for even the men in your life to feel satisfied. i made this for ron the other night & the next day he asked me for the grocery list to make it himself. it is THAT delicious.
here is one more secret though. the only salad dressing you should ever use is this garlic vinaigrette. my sweet friend got me hooked on this years ago. it is literally all i use. i have it on subscription order so i never run out!
