believe it or not. i had not experienced the gloriousness of burrata until two years ago! at first bite, I was left wondering how i had lived 33 years without indulging in its goodness. so to make up for lost time. i try to enjoy it often.
one of the easiest ways to enjoy burrata is with roasted tomatoes. add a generous portion of arugula & a heavy drizzle of balsamic glaze . . . and you are in burrata heaven.
this vegetarian meal is quick & easy to whip up. bursting with flavors. and downright delicious. truth be told. the kicker is actually the roasted tomatoes. don’t skip this part & opt for fresh raw tomatoes like a traditional cypress salad. the way the tomatoes blister & caramelize in the oven . . . its worth the 25 minutes of cook time.
roasted tomatoes & burrata.
one carton of cherry tomatoes.
one tub of burrata.
one box of arugula.
one bottle of balsamic glaze.
1/4 cup extra virgin olive oil.
1/2 teaspoon salt.
1/2 teaspoon pepper.
1 teaspoon thyme.
start by placing your tomatoes in baking dish. pour the oil on top. sprinkle the salt. pepper. and thyme on top. toss the tomatoes to coat them evenly. roast the tomatoes in the oven at 375 for about 25 minutes. you want them to start shriveling & blistering a bit. I like to turn my broiler on at the end to really get those charred bits.
once you remove the tomatoes from the oven. give them 2-3 minutes to settle.
plate your heaping handful of arugula. top with a scoop of tomatoes. then lay the burrata on the very top.
pour a very generous drizzle of balsamic glaze over the top. sprinkle with an extra bit of pepper. and enjoy every last bite of the goodness!
