the yummiest pumpkin muffins with a crumbly streusel topping. a real family favorite.
Ingredients
MUFFIN INGREDIENTS:
1 3/4 cup flour
1 teaspoon baking soda
2 teaspoons ground cinnamon
1 teaspoon pumpkin pie spice
1/2 teaspoon salt
1/2 cup vegetable oil
1/2 cup sugar
1/3 cup packed light brown sugar
1 1/2 cup canned pumpkin
2 large eggs
1/4 cup half & half
CRUMB TOPPING:
1 cup flour
1/3 cup sugar
1/3 cup packed light brown sugar
1/2 teaspoon pumpkin pie spice
1/2 teaspoon cinnamon
1 tablespoon butter, melted
MAPLE DRIZZLE
1 1/2 cup powdered sugar
2 tablespoons maple syrup
2 tablespoons half & half
Instructions
preheat your oven to 425. spray a muffin tin or line it with individual parchment squares.
in a large bowl, whisk together the flour, baking soda, cinnamon, pumpkin pie spice, and salt. set aside.
in a medium bowl, whisk the oil, sugar, brown sugar, pumpkin, eggs, and milk. pour these wet ingredients into the dry ingredients. fold it together gently, just until it is fully combined.
using an ice cream scoop, fill the muffin tin with the batter.
in a separate bowl. make the crumble topping. whisk together the flour, sugar, brown sugar, pumpkin pie spice. stir in the melted butter until a crumble forms. place spoonfuls of the crumble on top of each muffin batter.
bake these at 425 for 5 minutes. then lower the oven down to 350 and bake for an additional 15 minutes. remove the muffins and set aside to cool while you prep the icing.
simply mix together all of the ingredients until smooth. using a spoon, drizzle the icing over the muffins.
then enjoy all the goodness.
