oh man. oh man. oh man! this is one of our family faves. we gobble these little pesto pizzas up in .7 seconds. they are so dang good.
you all know that the kitchen is the heart of this home. we celebrate all things with food. to us food is a lot like comfort. its a lot like love. its a lot like a big hug. we totally believe that in this family. we love one another by cooking for each other. cooking with each other. and sharing in our meals together. I truly believe that time spent in the kitchen evokes connection & relationship.
as a result. a lot of my recipes are built with just that in mind. a goal to cultivate intentional connection. grabbing those little sticky handed kiddos to come & help. plopping their tooshies on the countertop & allowing them to crack the eggs. and stir the batter. and lick the spoon.
these pizzas are the perfect recipe to do just that. there may not be any battered spoons to lick. but we don’t turn down a pesto covered spoon either.

the beauty of these is that you can make it your own. build your own pizza kinda thing. poppy LOVES green olives. just like his mama. while piercie & penn LOVE to add salami on theirs. so get all the toppings. all the yummy things. and let those kiddos build their perfect pie.
the foundation of my favorite pie is the pesto. everybody needs a fantastic pesto recipe up their sleeve. it is an essential and can be used in so many different ways. pesto is really easy to throw together. and freezes really well. so prep it in bulk & freeze in small portions.
pesto is a great choice for a low carb lifestyle. as it is loaded with good healthy fats. the nuts. the oils. the cheese. fat heaven.
walnut basil pesto:
1/4 cup chopped walnuts
1/4 cup pine nuts
3 tablespoons chopped garlic
6 cups fresh basil leaves
1/2 tablespoon kosher salt
1 teaspoon black pepper
1 & 1/2 cup good extra virgin olive oil
1 cup grated parmesan cheese
put walnuts. pine nuts. and garlic into food processor. pulse for 15 seconds. then add in the basil. salt. pepper. pulse again. while the processor is on low speed. slowly add in the olive oil. process this until the mixture is completely pureed. then add in the parmesan cheese for a quick pulse. taste test this & season as needed.
as for the pizza. i love to use the Sami’s Bakery slim trim lavash flatbread. i also love to use the Naan flatbreads. both are delicious. just depends on if you are watching your carb intake or not.
i simply spread the pesto over my flatbread of choice. add thinly sliced tomatoes. add provolone cheese. add olives. salt & pepper. that is my perfect combo. but you can add any toppings or remove any toppings to your liking.
bake this at 400 for about 8-10 minutes. until the cheese is melted & golden brown.
allow it to cool a few minutes. then slice & enjoy!
