1 bag of frozen shredded hash browns
1 bunch of scallions, chopped finely
1 and 1/2 teaspoon salt
1 and 1/2 teaspoon garlic powder
1 teaspoon black pepper
1 cup grated parmesan cheese
2 tablespoons olive oil
1 small carton of sour cream
extra scallions for garnish
preheat your oven to 350 degrees.
in a large mixing bowl, combine all the ingredients except the sour cream. stir to mix.
grease a muffin pan & fill each space with hash brown mixture.
using the back of a spoon, push the hash browns down into the cups.
bake for forty five minutes, until the edges are golden brown.
top with a dollop of sour cream & extra scallions.
