these tacos are a major grand slam. literally so dang delicious. and so dang easy to make. just grab your slow cooker. or your dutch oven. and whip these babies up. your entire family will love them.
forget taco tuesday. you’ll be wanting tacos everyday after you try these. the pot roast is super tender & juicy. the flavors have just enough kick without being too spicy. and the toppings are built to your liking.
mojo pot roast tacos:
3-4 pound pot roast. cut into three smaller pieces.
1 yellow onion. diced.
the juice of 2-3 limes.
2 jalapeño peppers. diced finely & seeds removed.
1 tablespoon chili powder.
2 tablespoons montreal steak seasoning.
5 garlic cloves. diced.
1 teaspoon cumin.
2 teaspoons salt.
1 teaspoon pepper.
put all of these ingredients into your slow cooker or dutch oven. if you are using a slow cooker. set it on low for 4-5 hours. if you are using a dutch oven. heat the oven to 250 and allow it to cook for 4-5 hours.
when the beef is cooking though., use two forks to shred it up. taste & season more to your liking.
then simply assemble your tacos. we like to top ours with a mexican blend cheese. tomatoes. lettuce. and lime infused sour cream. but any topping you like if fair game. load those babies up & enjoy.
honestly gang. ron would not stop going on & on about these tacos. the men in your life will devour these!
