mini apple hand pies. sweet cinnamony apples with a flaky buttery crust.
store bought pie crust. two pack.
four apples. mix of red & green.
1/2 stick salted butter.
1/2 cup brown sugar.
1 tablespoon cinnamon.
start by peeling & dicing your apples. you’ll want them bite size.
throw your stick of butter in a pan & let it melt over medium heat. pour in your brown sugar. stir until it dissolves & is bubbly. it will make a caramel sauce of sorts.
then toss in all the apples. stir to completely coat all the apples. allow the apples to simmer for a few minutes until they have softened. remove from the heat & allow the mixture to cool.
using a bowl as your cookie cutter, cut out 8 circles in your pie crust.
set them on a baking sheet lined with parchment paper.
using a spoon, scoop spoonfuls of mixture onto each pie round. you’ll only want to cover about 1/3 of the shell. fold the rounds in half to close the hand pies. using a fork, pinch the seam together.
before you pop them in the oven, stir up your egg with a splash of water. brush the egg wash on top of each hand pie. then sprinkle the coarse sugar generously on top.
bake these at 400 degrees for about 15-20 minutes. you’ll want the pie crust to be golden brown.
these are delicious right out of the oven plain. but they are especially delicious with a scoop of ice cream on top. enjoy!
