1 slice of sprouted bread, lightly toasted
8 ounces of feta crumbles
3 ounces whipped cream cheese, room temp
cherry tomatoes, halved
1 avocado, diced
1/4 cup fresh mozzarella, diced
1/4 cup fresh basil
balsamic glaze for drizzle
fresh cracked pepper
start by making your whipped feta. in a food processor, mix together the feta & creamy cheese until it is creamy & smooth. if you want to add a sprinkle of olive oil to thin it out, that is yummy too.
dice your avocado. half your tomatoes. dice your mozzarella. julienne your basil leaves.
then lightly toast your bread. you want it a bit crispy, but not overly toasted. spread your whipped feta on top. add a layer of fresh basil. then pile on the avocado, tomotoes, and mozzarella.
sprinkle with a bit of cracked pepper & sea salt. then drizzle your balsamic glaze on top.
