we are big breakfast fans around here. literally. we have breakfast for dinner every single week. it is just so good. and feels like comfort food. right?
growing up my dad always made us bacon. egg. and cheese sandwiches. and to this day. all my brothers. my cousins. and myself believe that nobody can make a breakfast sandwich like baboo can. he has it mastered. i have such fond memories of having his breakfast for dinner as a kiddo . . . thats probably why i find such comfort in having it now.
one of my favorite breakfast dishes is a frittata. that sounds big. bad. & bossy. but its really not. like you literally cannot mess it up. its super simple to whip together. and the beauty is you can make any variation based on what you have in your pantry or fridge at any given moment. so long as you have eggs. milk. salt. pepper. you have the makings for a frittata.
this time i am making a gruyere & leek frittata. its simple. its rustic. its flavorful. its all the things yummy.
preheat your oven to 375.
start your frittata by slicing the leeks very finely. toss them into a cast iron skillet with two tablespoons of butter. season them generously with salt & pepper. sauté those babies on medium heat till they are slightly browned.
while the leeks are browning. grate your gruyere cheese.
in a separate bowl. beat together the eggs & the milk. then pour the egg mixture over the leeks. directly into the skillet. then top the eggs with your grated cheese.
let the frittata sit on the stove top for about five minutes for the edges to set. the inside will not be cooked through. but the edges will be bubbly & starting to brown.
pop the skillet into the hot oven for 7-8 minutes. and you are done. how easy is that?
a few variations i like to do with this recipe are: pepper jack & jalapeño. cheddar & bacon. goat cheese & basil. cheddar & broccoli. swiss & ham. all of these are so yummy. and super easy to swap out.
gruyere & leek frittata:
1 tablespoon butter.
1 large leek. washed. thinly sliced.
6 large eggs.
1/2 cup whole milk.
1 block gruyere cheese.
salt & pepper to taste.
melt your butter in the skillet.
slice your leek.
brown your leek.
salt & pepper to taste. beat eggs & milk. add to leek.
top with cheese.
set on stovetop for 5 minutes.
pop in 375 oven for 7-8 minutes.
