where are my low carb gals? i’m talking to you right now. getting tired of your same ol same ol low carb snacks? have i got the best idea for you. this is not rocket science. it is nothing that will blow your mind. it is nothing that will shock & awe.
but. but. but.
it is one of my fave ways to snack on a low carb day. it is downright delicious. a breeze to whip up. and low carb to the max. allow me to introduce to you . . . the easiest little goat cheese stuffed peppers.
aren’t they purtyyyy? for real. the snack easiest gang.
grab a little bag of these mini peppers. slice them in half & remove the seeds. toss them in 2 tablespoons of olive oil.
then mix up a bowl of goat cheese & shaved parmesan cheese. add salt & pepper to taste.
stuff the peppers.
pop those babies into the oven at 425 for about 20 minutes. you want the cheese to start browning. those little crispy bits are the best.
and thats it. sometimes i will throw a little chopped dried mango on top. sometimes a little piece of bacon. sometimes a jalapeño. you can accessorize these any which way you fancy.
you will love these. they are also great for a crowd. so next time you are having a girls night. whip these babies up & watch your best girls devour them in no time.
