best damn coconut cake
1 box yellow cake mix
1 box instant vanilla pudding mix
3/4 cup canola oil
3/4 cup water
1/2 cup sugar
1/3 cup full fat ricotta cheese
1/3 cup full fat sour cream
1 1/2 tablespoons almond extract
preheat oven to 350.
in a large mixing bowl. mix all ingredients until smooth.
pour batter into a greased cake pan.
bake for about one hour.
remove cake from oven. allow to cool completely before removing from pan.
cream cheese frosting & coconut topping
one block cream cheese. softened.
one box confectioners sugar.
two tablespoons almond extract.
splash of heavy cream or half-n-half.
coconut. either shredded or chips. matter of preference.
in a mixer. beat the cream cheese. add in the sugar slowly. beat until smooth. add in the almond extract & cream. use a bit more cream to thin out to your liking. that is a matter of preference on how thick you like your frosting.
once the cake has cooled completely. frost the cake. top with coconut.
and enjoy every last bite.
