two rotisserie chickens. meat pulled off & shredded.
one block cream cheese. softened.
one block cheddar cheese. freshly grated.
one jar frank’s hot buffalo sauce.
two packs ranch seasoning mix.
6 bell peppers. any colors.
one bottle ranch dressing.
start by pulling all the meat off the rotisserie chicken. discard the bones. shred the chicken. in a large bowl. combine the chicken. the cream cheese. the shredded cheddar cheese. the entire bottle of hot sauce. and the two packets of ranch mix. stir until well combined.
wash the peppers. then cut the top off. using a small knife. cut the inside portion out of the pepper. make sure you get all the seeds out.
using a large spoon. stuff the peppers with the chicken mixture. place the stuffed pepper into a baking dish. put the pepper toppers back on their respective pepper. drizzle olive oil over the tops. pop those babies into the oven.
bake at 350 for about 30 minutes. if you like your tops charred like i do. turn the broiler on for a quick minute at the end.
remove the peppers from the oven. allow them to cool for about 5 minutes. then drizzle ranch dressing all over those yummies & enjoy!
