2 Naan flatbreads
1 tablespoon olive oil
1 cup thinly sliced purple onion
salt & pepper to taste
crushed red pepper flakes to taste
2 tablespoons honey
1/2 cup ricotta cheese
1/2 cup feta crumbles
1 cup blueberries
arugula or mixed greens for topping
preheat the oven to 400 degrees.
heat the olive oil in a pan over medium heat. sautéed the onions with salt. pepper. and red pepper flakes. let the onions caramelize for about 3-5 minutes. then remove from heat.
stir together the ricotta & feta. spread the cheese mixture over the Naan.
then top with the onions & the blueberries.
bake for about ten minutes at 400. then turn the broiler on high for two minutes to burst some of the berries. after you remove from the over. sprinkle a generous handful of greens on top.
cut. serve. & voila!
