blueberry crumb cake recipe

Ingredients

for the batter:

2 cups flour

2 teaspoons baking powder

1/2 teaspoon salt

1/2 stick butter, softened

3/4 cup sugar

1 egg

1/2 cup milk

1 pint blueberries

for the crumble topping:

1/2 cup sugar

1/4 cup flour

1 teaspoon cinnamon

1/2 stick butter, chilled & cubed


Instructions

preheat your oven to 375.

sift together the flour, baking powder, and salt. 

in your mixer, cream the butter & sugar until light & fluffy.

beat in the egg & milk.

add the flour mixture into the butter mixture. mix just until combined. 

fold in the blueberries. 

butter a square baking pan. spread the batter into the pan. 

combine all the crumble ingredients in a bowl. using a pastry cutter, or two knives, cut it until it resembles coarse meal. sprinkle the crumble over the top of the batter. 

bake for about 35 minutes.
