one party size bag of tortilla chips. i prefer the bite size
1.5 pound ground beef
2 teaspoons salt
1 teaspoon pepper
1 tablespoon chili powder
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/2 teaspoon paprika
2 teaspoons cumin
3 cans of black beans or pinto beans
1 large jar of salsa verde
one block colby jack cheese. shredded.
one block pepper jack cheese. shredded.
one block cheddar cheese. shredded.
one jar jalapeño slices
1/2 cup sour cream
3 limes. juiced. zested.
one bunch of cilantro. chopped.
start by selecting your platter. use a large one so that you can create a layer of chips about 2-3 chips deep. you want to get all the toppings on most of the chips. spread those chips out.
over medium heat. brown your ground beef. seasoning with salt & pepper. once the beef is cooked all the way through. drain the fat. then add all the other spices in & a splash of water. bring to a boil & mix in the seasoning really well. turn the stove down to a simmer.
drain the cans of beans. add the beans to the beef. stir to incorporate. add the jar of salsa and allow this to simmer for about 5 minutes.
using a large spoon. place heaping spoonfuls of the bean & beef mixture onto the chip platter.
after you have shredded all the cheese. layer the cheese all over the top of the meat & beans. the more cheese the better. lastly layer the can of jalapeños on top of the cheese.
put the dish under the broiler for about 5 minutes.
while the nachos are baking. whisk together the sour cream. the lime juice. and the lime zest. add more lime juice to thin out the sour cream. you want it to be drizzle-able.
when the cheese is melted & turning golden brown. pull the dish out of the oven. using a spoon. drizzle the lime infused sour cream over the top.
lastly. sprinkle the chopped cilantro over the top.
then enjoy. every last chip of goodness!
