i love me some overnight oats. and you all know i love me some coconut & chocolate. so what could possibly be better than mashing up a few of my favorite things and creating almond joy overnight oats?
these oats are impossibly simple to throw together. it will take you about five minutes before you call it a night. and then they are ready & waiting for you the following morning. saving moms all over the world their sanity & their minutes during those early school mornings.
kiddos will love them because of the chocolate chippers. but lets be honest. mama saves these for herself. they are that dang good.

you all know that i bring my rascals into the kitchen all the time. its a great way to foster connectivity & engagement. all the while instilling in these boys a love for cooking. these oats are the perfect recipe for little hands to help with. you literally cannot mess them up. so if they get a little too excited with the cocoa powder . . . don’t sweat it. every bite will just be a touch sweeter.
poppy. my 6 year old. is super logical. he has really gotten interested in how the body works. which foods are good. what macros. and carbs. and calories. actually are. its kinda fun. when i am cooking dinner. he will ask all sorts of questions. how cool is that? already learning the value of fueling our bodies properly for optimal wellness. so dang good.
pierce and penn penn. they are just there to help in hopes of gobbling up all the crumbs. and you know what. I am here for it. between crumb snatching. we giggle. we kiss. we help. we connect. gang. i can’t say it enough. get those kiddos in the kitchen with you. plop them up on the counter top & let them help. don’t let the fear of a mess keep you from building those memories. be ok with it taking longer to complete a meal because they want to do all the steps. allow them to try to crack the eggs. a little extra crunch from egg shell never hurt nobody.

almond joy overnight oats:
two cups old fashioned oats
1 1/2 cup unsweetened califia brand toasted coconut almond milk
2 tablespoons cacao powder
1/3 cup unsweetened shredded coconut
1/3 cup dark chocolate chips
1 teaspoon almond extract
2 tablespoons agave nectar, add more if you like it sweeter
2 tablespoons chia seeds, optional
2 tablespoons flax seeds, optional
just mix all of this together. store in the fridge overnight. and voila.
i prefer to eat my overnight oats cold. strait out of the fridge. but you could certainly heat them up if that’s your preference.
these portions are guidelines. you do not have to be exact. tweak this to your liking. if you prefer more coconut. add more. if you love almond extract and want more. do it. make this to your tasting. and enjoy all those delicious carbs! your body will thank you for fueling it so deliciously.
